Delicious Fusion : Samosa Quesadillas Recipe

Ingredients for the Filling:

Note: This filling is perfect for 2-3 burrito-sized tortillas or 4-5 fajita-sized tortillas, depending on your preference.

  • 2 medium potatoes, boiled & peeled
  • 1/2 cup green peas
  • 1/2 cup shelled edamame (optional, you can use peas alone)
  • 1/2 cup cauliflower rice (optional)
  • 1 tbsp oil (plus extra for lightly spraying the tortilla)
  • 1 tsp cumin seeds
  • 1/2 tsp fennel seeds (optional)
  • 1/2 tsp grated or finely chopped ginger
  • 1/2 green chili, finely chopped
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/4 tsp red chili powder (adjust to spice level)
  • 1/4 tsp amchur powder (or chaat masala as an alternative)
  • 1/4 tsp hing
  • 3/4 tsp salt (or to taste)
  • Water as needed

**Instructions:

  1. Mash the boiled and peeled potatoes and set them aside.
  2. In a pan over medium heat, heat oil and add cumin and fennel seeds. Cook for a few seconds until fragrant.
  3. Add frozen peas, edamame, and riced cauliflower. You can also steam them separately and then add to save cooking time. Cook for 5-8 minutes or until they are soft, adding a few tablespoons of water if needed.
  4. Add green chili and ginger, cooking for a few more minutes.
  5. Incorporate the boiled and mashed potatoes, followed by all the spices. Use a potato masher to combine and mix well. Add another tablespoon of water if needed and cook for an additional minute or two. Remove from heat and set aside.

To Assemble:

  1. Use Siete Burrito Size Tortillas or any size/kind you prefer. Lightly brown both sides by spraying with oil.
  2. Spread a garlic and herb cheese spread (such as boursin) and chutney on one side of the tortilla.
  3. Add the prepared filling to half of the tortilla. Sprinkle some cheese or nutritional yeast if desired.
  4. Fold the tortilla in half and cook until both sides are crispy.
  5. Cut and serve with chutney or hot sauce.
