If you love my Besan Banana Bread, you will love this pumpkin version!
The secret ingredient is chickpea flour, also called besan in Indian cooking. Chickpea flour really adds a nice nutty flavor plus a little bit of protein into your bread! You can get besan at your local Indian store or Whole Foods.
INGREDIENTS:
1/2 cup brown sugar
1 cup pumpkin purée (about 1/2 can)
1/4 cup oil
1 egg
1 tsp pumpkin pie spice
2 teaspoons baking powder
1 tsp salt
1 cup chickpea flour (besan) OR USE 1/2 cup regular flour and 1/2 cup chickpea flour.
Optional mix ins: 1/4 cup chocolate chips and/or 1/4 cup nuts
DIRECTIONS:
1. Preheat oven to 350°F.
2. Mix the pumpkin with the sugar, oil, salt, and baking powder. Add the egg slowly.
3. Mix in the besan and the chocolate chips.
4. Bake for 40 mins or until cooked through fully.
