These bites were inspired by the Cashew Date Bars from Larabar and Good & Gather—staples in my pantry for a quick and nutritious snack. But making them at home? Even better!

What You’ll Need

Here’s a simple ingredient list to get you started:

  • 1 cup raw cashews
  • 5-6 pitted dates (make sure they’re soft)
  • 2/3 cup unsweetened shredded coconut (+ extra for rolling)
  • 1 tbsp ground flaxseed
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt

💡 Optional Mix-ins: Chia seeds, Nutella, chocolate chips—get creative!

How to Make Them

  • Add dates & cashews in a food processor. Blend well.
  • Add shredded coconut, flaxseed, cinnamon, nutmeg, & salt. Pulse a few times to mix well.
  • Transfer to medium boll. If using optional mix ins, add here.
  • Scoop about a tbsp. of this mix in your palms and form the balls. Makes about 8-10.
  • Place on baking tray.
  • Optional – roll in shredded coconut.
  • Keep in fridge in air tight container.
