This year for Mother’s Day we honored the amazing moms in our lives with a delightful culinary treat! This year, we celebrated her sweetness with a vibrant and refreshing Kale & Peach Salad that made her day as bright as she makes ours.

Why Kale & Peach Salad?

This salad isn’t just delicious; it’s a nutritional powerhouse packed with vitamins, minerals, antioxidants, fiber, and protein. But what truly makes this dish is the Peach Vinaigrette, a flavorful concoction that ties all the ingredients together, leaving you craving for more with every bite.

The Peach Vinaigrette:

  • 1 Ripe Peach (pitted and rough chopped)
  • Juice of 1 Large Lemon (~2 TBSP)
  • 1 TSP Lemon Zest
  • 2 TBSP Extra Virgin Olive Oil
  • 1 TBSP Honey
  • 1/4 TSP Cumin
  • Salt to taste
  • Few TSPs of water to thin it out if needed

Simply blend these ingredients until you achieve a smooth consistency, and voila! You have a dressing that not only enhances the flavor of the salad but also adds a touch of sweetness and tanginess that’s simply irresistible. Plus, it keeps well in the fridge for up to a week, so you can enjoy it for days to come.

The Salad:

For the salad itself, you’ll need:

  • 1/2 bunch Kale
  • 1 to 2 Handful Arugula
  • 1/2 cup grape tomatoes, halved
  • 2 peaches, cut to your liking
  • 1 can chickpeas, drained (add in chaat masala or seasoning of your choice and optional roast in the air fryer at 390F for 8 to 10 mins or in the oven at 425F for 15-20 mins); you can also add in tofu, seitan, tempeh, or other protein of choice if you prefer.
  • Crumbled Feta Cheese
  • 1 TBSP Hemp Seeds

Simply assemble these ingredients, toss them in the delightful Peach Vinaigrette, and you’re ready to indulge in a culinary delight that’s as nutritious as it is delicious. Plus, this salad keeps well in the fridge for a few days, making it the perfect make-ahead option for busy moms.
