DIY Protein-Packed Egg Bites

If you love Starbucks egg bites but hate the $5 price tag for just two bites, you’re not alone. Luckily, Coach Abrar has perfected a homemade version that’s not only more affordable but also higher in protein and just as delicious!

These egg bites are incredibly easy to make, stay fresh in the fridge for several days, and can even be frozen for later enjoyment. Each egg bite is approximately 95 calories with 8 grams of protein and 5 grams of fat.

Ingredients:

  • 7 eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese
  • 1/4 cup milk or heavy cream
  • Seasoning of your choice
  • 2 cups diced veggies

Instructions:

  1. Preheat the Oven: Set your oven to 375°F (190°C).
  2. Prepare Your Veggies: While the oven is preheating, dice up your veggies.
  3. Blend the Egg Mixture: In a blender, combine the eggs, cottage cheese, milk, and your chosen seasonings. Blend until the mixture is smooth.
  4. Fill the Muffin Pan: Pour the egg mixture into a muffin pan. Then, add the diced veggies to each compartment.
  5. Bake: Place the muffin pan in the oven and bake for 25-30 minutes. To ensure they’re fully cooked, poke them with a fork.
  6. Enjoy: Once they’re done, let them cool slightly before enjoying your homemade egg bites!
