Savory Oatmeal Congee

This Chinese-inspired dish is one of my favorites for breakfast or brunch especially with a hearty dollop of homemade chili oil. It’s very easy to make and so tasty. It’s high protein and high fiber too!!

This recipe makes 2-3 servings so you can scale it accordingly.

INGREDIENTS
1 cup quick cooking oats (or however much you want to eat)

2 cups water

4 eggs or egg whites (use more or less depending on how much protein you want

3 cloves garlic, minced

2 tsps ginger, minced

2 tsps black pepper

2-3 tsps salt to taste

Optional:
– Veggies like mushrooms or spinach to mix in.
– Scallions for garnish
– 2 tablespoons soy sauce for more flavor

DIRECTIONS:
1. Cook the oatmeal on the stove with the water according to package instructions. As it’s cooking, mix in the garlic, ginger, salt, and pepper.

2. Scramble in the eggs (OR cook separately and add later – whatever you prefer works).

3. Splash in the optional soy sauce and mix in the optional veggies. Add more water if you want it more runny.

4. Cook thoroughly and enjoy!! Garnish with scallions and spicy chili crisp!
