  • Salt (a good amount for boiling & about 1 tsp for seasoning)
  • 1/2 tsp garlic powder (or minced garlic if you prefer)
  • 1/4 tsp turmeric
  • 1/4 tsp red chili powder (adjust to your taste)
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander
  • Optional: Tandoori masala for a bit of a kick
  • Parmesan cheese (or swap with nutritional yeast if you’re vegan)

Instructions:

  1. Start by preheating your oven to 450F.
  2. Trim the bottom of your Brussels sprouts and chuck any yellow leaves. Give ’em a quick rinse, then boil them in salted water until they’re just tender, about 10 minutes. If you prefer, you can steam them instead. Once they’re done, drain and rinse them under cold water, then pat them dry with a towel and pop them into a medium-sized bowl.
  3. Next up, toss those Brussels sprouts in oil and salt until they’re all nicely coated. Transfer them to a baking sheet and spread them out evenly. Now comes the fun part – use the bottom of a glass or mug to gently squash them flat. It’s surprisingly satisfying!
  4. In another bowl, mix together all your seasonings, then sprinkle them over your Brussels sprouts.
  5. Slide your baking sheet into the preheated oven and let your Brussels sprouts bake for around 10 minutes. After that, sprinkle on your Parmesan cheese and bake for another 8 minutes. If you want an extra crispy finish, you can broil them for 2 minutes.
