INGREDIENTS – MAKES 8 SERVINGS
1 onion, diced
1 bunch cilantro
1 tablespoon ginger-garlic paste
2 lbs ground chicken
1 teaspoon oil
1 tomato
2 tablespoons Shaan Kofta spice mix (per taste)
1/4 cup yogurt, plain or Greek yogurt
1 tablespoon ghee
1 cup water
DIRECTIONS
➡️ In a food processor, pulse half the onion, the majority of cilantro (leave a little for garnish at the end), and ginger-garlic paste. Once combined, add the chicken and blend until everything is smooth and incorporated.
➡️ Oil your hands and form meatballs using the chicken. Set aside.
➡️ Make the curry: In a pan with 1 teaspoon oil, sauté the rest of the onion.
➡️ Add the tomato and Shaan spice mix. Add 1/2 cup water and sauté until the tomato is soft.
➡️ Transfer the mixture to a blender and blend until smooth.
➡️ Pour back into the pan and add another 1/2 cup water. Bring to a simmer. Taste for spice levels and add more spice mixture per taste
➡️ Add the meatballs into the gravy. If needed, add more water so that the gravy just covers the meatballs.
➡️ Cover and let cook for 20-25 mins until the chicken is fully cooked.
Garnish with cilantro and serve with rice!
